Mitch Orr x Canopy

May 8th and 9th

This Tasting Australia, Mitch Orr takes over the kitchen at Canopy for two days, bringing his bold, produce-driven, irreverent style.

Known for ACME, Kiln and now Sydney’s The Palomar, Orr will serve a mix of favourites and new dishes in Canopy’s private dining room.
$150 pp, two lunch sittings daily (11:30am, 2:30pm) with optional $85 wine pairing.

After the lunch sessions at Canopy, Orr will remain in the kitchen whipping up some of his famous dishes in snack form. At $15 per ticket, this guarantees you entry and a place to sit with an arrival spritz while you pick and choose from Orr’s short form menu.

Join Canopy’s head bartender Lorenzo Di Pasquo for an intimate deep dive into Italy’s iconic drinking traditions.

Explore the contrasts between aperitivi and amari — their flavours, origins and place around the table. Across two brackets, taste four of each, with a cocktail and snack to finish both.

The ‘Canopy Experiences’ series celebrates our passion for wine and cocktails, offering hands-on, educational sessions that demystify drinks and make them more enjoyable.

Held in our private cellar on selected Thursdays from 6pm, each session runs for around 45 minutes.

Riesling: An Exploration is a guided tasting of four wines (Thurs 19th Feb, 6pm, $55pp) uncovering the grape’s many personalities, why winemakers and sommeliers adore it, and how style and place shape what’s in your glass, with practical tips and lively bottles to elevate your dinner table conversation.

Foundations of Cocktails is a relaxed, confidence-building session (Thurs 5th March, 6pm, $45pp) exploring cocktail history, the balance of sweet, sour and bitter, the role of alcohol, and the classic styles that continue to shape modern drinking culture—designed to make ordering and mixing feel far less mysterious.

Chardonnay: The Queen of Grapes is a guided tasting of five wines (Thurs 19th March, 6pm, $70pp) exploring styles from lean and mineral to rich and generous, and unpacking what truly shapes this remarkably versatile grape.

Spirits 101 is an introduction to how spirits are made and what shapes their character (Thurs 2nd April, 6pm, $45pp), comparing grain, fruit and sugar-based styles while exploring ageing and regional influence to better understand what’s in your glass.

Burgundy: A Deep Dive is an accessible tasting of four wines (Thurs 16th April, 6pm, $70pp) exploring why Burgundy is the spiritual home of Chardonnay and Pinot Noir, what makes the region unique, and why some bottles command extraordinary prices—without the snobbery.

Aperitivo and Amari explores Italian drinking culture from spritzes to bittersweet nightcaps (Thurs 30th April, 6pm, $45pp), delving into vermouth, amari and aperitivo traditions—how they’re made, how they taste, and why Italians treat drinking as a ritual worth savouring.

Italian Wines: Viva Italia! is a tasting of four wines (Thurs 14th May, 6pm, $55pp) exploring Italy’s extraordinary diversity of grape varieties, the expressive character of its whites and reds, and the deep traditions that continue to shape what’s in the bottle.

Bitters, Syrups and Liqueurs explores the often-overlooked elements that define great cocktails (Thurs 28th May, 6pm, $45pp), revealing how bitters, syrups and liqueurs shape flavour, aroma and texture—and how small adjustments create significant impact.

Spanish Wines Through the Lens of Canopy is a tasting of four wines (Thurs 11th June, 6pm, $70pp) celebrating soulful, food-friendly Spanish bottles, with guidance on reading labels, decoding styles and understanding the history that shapes them.

Ice, Dilution and Technique is a deep dive into one of the most overlooked elements of a drink (Thurs 25th June, 6pm, $55pp), exploring how temperature, dilution and chilling methods shape texture, aroma and balance—and why mastering ice is the key to elevating cocktails.

Grenache: Australia vs. the World is a comparative tasting of four wines (Thurs 9th July, 6pm, $55pp) exploring how Grenache shifts across climates and countries, why it excels both solo and in blends, and what sets Australian expressions apart from the rest of the world.

Modern Trends and Innovations offers a snapshot of contemporary cocktail culture (Thurs 23rd July, 6pm, $55pp), exploring how global influences, new techniques and creative thinking are shaping today’s bars—grounded in flavour rather than gimmicks.

Shiraz to Syrah: A Spectrum is a side-by-side tasting of five wines (Thurs 6th August, 6pm, $65pp) exploring how the grape shifts from bold and plush to restrained and elegant across regions, and why both Australia and the wider world claim it as their own.

The Art of Balance: Make Your Own Cocktail is a hands-on finale (Thurs 20th August, 6pm, $55pp) bringing together sweetness, acidity, bitterness, alcohol and texture as you design and craft your own cocktail with confidence and clarity.
